If you’re on the fence with kale, then try this healthy, leafy green in an easy kale soup recipe. Kale is a vegetable that folks either love or hate because of its texture, but kale’s robust texture makes it extremely versatile for many recipes, and using kale in a vegetable soup is a simple way to tame the texture.

Kale Soup Recipe Ingredients

12 oz KALE
1 lg ONION chopped
1 CARROT
1 SWEET POTATO
3-5 cloves GARLIC chopped
1 tsp CHILI POWDER
1 tsp CAYENNE PEPPER
1 tsp GARLIC POWDER
½ tsp BLACK PEPPER
2 cups BROTH
2 Tbsp OLIVE OIL

How to Make Kale Soup

  • Wash kale greens thoroughly and chop into rough, large sizes. Need a new Cutting Board? Price boards on Amazon.
  • I use 2 medium sized onions in the kale recipe video, or just use 1 large onion, but you can be flexible on the ratio of ingredients as you prefer. I like to cut the onion into large, thin slices for this soup dish.
  • In a large pot, heat light olive oil on medium heat. Check current prices for a Soup Pot on Amazon.
  • Saute chopped onion and garlic for 2 minutes.
  • Add seasoning and continue to saute for 2 minutes.
  • Add sweet potato, carrots, and broth, then top the dish with your kale greens. Cover the pot for a couple of minutes to allow the greens to soften and wilt.
  • Once the greens have wilted, stir all the ingredients together well, then add just enough water to cover the ingredients completely.
  • Cover the pot and turn up the heat to bring the pot to a bubble, then reduce the heat, cover the pot with a lid, and allow the soup to simmer gently for about 30 minutes.
  • After half an hour, your soup will be ready to eat, but the longer you let soup sit, the tastier it will be, which is always true for soups and stews, so the more advanced you can make the dish ahead of time, the better it will be!

Creamed Kale Recipe – healthy coconut kale dish

Cook a healthy creamed kale recipe that is not only incredibly tasty, but super simple to make. Although there are few ingredients to this kale dish, it’s super flavorful and makes a great side dish or a complete healthy meal when served over rice or quinoa.

Ingredients for Coconut Creamed Kale Recipe

1 big bunch KALE
15 oz canned COCONUT MILK
½ cup ONION (chopped)
5-9 cloves GARLIC (chopped)
1 JALAPENO (optional, chopped)
SALT and PEPPER (to taste)
OIL for cooking
serve over rice or quinoa,
and top with crushed peanuts

Buy fresh kale that is firm and crisp and free off blemishes and discoloration. Avoid kale that is soft and wilted.

How to Cook Coconut Creamed Kale Recipe

Buy Kale that is crisp and firm, not sad and wilted.
Wash and drain the kale and separate the leaves from the stem. We’ll only be using the leaves for this recipe.
(If you can figure out something tasty to do with the stems, please let me know!)
Chop kale into a manageable sizes.
Heat a little oil in a large skillet or pot and saute the onion, garlic, and peppers for 2-3 minutes.
Add in the coconut milk and bring to a simmer. Check current prices for canned coconut milk on Amazon.
Add in the chopped kale, cover and let the kale steam and wilt for a couple of minutes.
Stir the pot and mix ingredients well.
Bring to a simmer, cover, and let cook to desired consistency…simmering about 5 minutes is good for me…the kale
is cooked down, but still has a nice texture.
Remove the pot from the stove and serve.
This dish makes a great side, or a healthy entree when served over rice or quinoa.
If desired, top with crushed peanuts for added texture and flavor.

Why eat raw kale salad? Kale is a so-called SUPERfood chock full of big-time nutrition and very fashionable in salad circles, so if you wanna be one of the cool kids, ya gotta eat it. If the Popeye franchise is ever re-booted, I’m sure our vegetable-friendly sailor will be shunning spinach and downing kale by the bunches–not that there’s anything wrong with spinach, but at the moment the kale lobby is a juggernaut.

Kale belongs to the same family as cabbage, Brussels sprouts, and collards.
