Cookie Dough Recipe – Icebox Cookies

Do you buy sleeves of premade cookie dough at the supermarket? You can make a homemade cookie dough recipe to keep in the freezer and then bake cookies whenever the mood strikes. Just slice off four or six or a dozen cookies or whatever you deserve and pop them into the oven for fresh baked cookies in a matter of minutes.

¾ cup SUGAR
½ cup BUTTER
1 EGG
1 tsp VANILLA
¾ cup NUTS
2 cups FLOUR

  • Around 30 minutes prior to making the dough, set out the butter and 1 egg.
  • In a mixing bowl, cream the sugar and the softened butter together. In the video, CG uses an electric mixer, but you can simply do this step by hand if you wish.
  • Mix the vanilla and the egg into the butter/sugar.
  • Add nuts. We use pecans, but walnuts or slivered almonds are good.
  • Incrementally mix in the dry flour until the flour is incorporated into the wet ingredients.
  • Divide the dough into thirds.
  • On a sheet of parchment paper, roll out each portion into a “log” shape about 1”-1½” inches in diameter. Check parchment paper prices on Amazon.
  • Roll the dough up into the parchment paper, twist the ends, and then place in the freezer until ready to bake.

Baking the Cookies

When you’re in the mood for cookies, just remove a roll of dough from the freezer and bake away. The sweet thing about having the dough premixed and rolled up, is that you can bake the entire roll, or simply slice off and bake as many cookies as you’re in the mood to eat.

  • Preheat oven to 350˚F
  • Remove dough from the freezer and slice cookies about ¼” thick.
  • On a baking sheet, arrange the cookies on parchment paper; you can use the parchment paper that the cookie dough was rolled inside! Compare prices for baking sheets on Amazon.
  • Bake cookies for about 10-12 minutes.
  • Remove cookies from the oven and allow to cool to an edible temperature, then eat away. I like to let the cookies cool completely so that they’re extra crunchy…perfect with coffee.

No-Butter Pecan Sandies Cookie Recipe

Try this no-butter pecan sandies cookie recipe. I substitute safflower oil for the butter in these pecan sandies, and also toast my pecans before chopping the nuts up to add into the cookie dough. Most pecan sandies recipes call for lots of butter, but I find this recipe works very well with just oil.

Ingredients for Pecan Sandies

1 EGG beaten
½ cup SAFFLOWER OIL
2 tsp VANILLA EXTRACT
1 cup SUGAR
2 cups ALL PURPOSE FLOUR
1 cup chopped PECANS

How to Make No-Butter Pecan Sandies

  • Preheat oven to 350 degrees Fahrenheit.
  • Lightly toast pecans. This will only take about 5 minutes. Watch the nuts carefully because they will quickly overcook. Once nuts cool, then chop.
  • In a large bowl, whisk 1 egg and then add in the sugar, oil, and vanilla extract and mix well.
  • Fold in the flour and chopped pecans.
  • Using your hands, mold tablespoon sizes of batter into cookie shapes; be sure to make the cookies an even thickness.
  • Place cookies on parchment paper on a baking sheet and bake in the oven for 15-20 minutes. Check current prices for parchment paper on Amazon.
  • Remove cookies from the oven and transfer to a cooling rack.

I’ve made these no-butter cookies with canola oil and safflower oil, and I prefer the safflower oil. You can check the current price for safflower oil on Amazon. Sunflower oil is another good low-fat oil that tastes great in baking as well, but it’s pricier.

Plain Cookies for Plain Folks

Crunchy, plain cookies are perfect with a cup of coffee. I love these cookies. They’re not overly sweet, but just sweet enough to pass as a cookie. If you like your cookies to shut up and sit in the corner until you’re ready for them, then this might be the cookie recipe for you.

Plain Cookie Recipe

2½ cups ALL PURPOSE FLOUR
½ cup SUGAR
½ cup OIL (I use safflower, canola, or sunflower oil…or substitute butter)
1 EGG beaten
2 tsp VANILLA EXTRACT
¼ tsp SALT
1 cup chopped WALNUTS (very optional…they won’t be plain cookies if you add nuts!)

How to Make Plain Cookies

  • Preheat oven to 350 degrees Fahrenheit.
  • In a large bowl, whisk 1 egg and then add in the sugar, oil, and vanilla extract and mix well.
  • In another bowl, sift the flour and salt.
  • Pour the wet ingredients into the dry ingredients and mix together. Add a touch more flour if the dough is too sticky.
  • If adding nuts, chips, or dried fruit, fold that into the dough.
  • Using your hands, mold tablespoon sizes of batter into cookie shapes; be sure to make the cookies an even thickness. Or roll out the batter and cut the dough into cookie shapes.
  • Place cookies on parchment paper on a baking sheet and bake in the oven until very lightly browned on the top. Need parchment paper? Check current prices for parchment paper on Amazon. The cookies will not color up much before they are finished, so if they are browned well on the bottom, they are likely done. If you wait for the top to color well, they will be overdone. 12-15 minutes baking time is a good estimate for tablespoon-sized cookies.
  • Remove cookies from the oven and transfer to a cooling rack. Allow the cookies to cool completely for the ultimate crunchiness. These cookies are pretty plain, but they have a terrific crunch and go great with a hot beverage.

Chocolate Chip Cookies quick and easy recipe

This quick chocolate chip cookies recipe makes a perfect weekend treat–it’s a super quick and tasty recipe that I have never mucked up–which is saying something.

Ingredients for Chocolate Chip Cookies

½ cup SUGAR
¼ cup BROWN SUGAR
½ cup BUTTER (soften)
2 tsp VANILLA EXTRACT
1 EGG
1½ cup ALL-PURPOSE FLOUR
½ tsp BAKING SODA
¼ tsp SALT
1 cup CHOCOLATE CHIPS
(or ½ cup chocolate chips and ½ cup chopped nuts)

How to make Chocolate Chip Cookies

Set out butter to soften and egg to come to room temperature.
Combine sugars, butter, vanilla extract, and egg in a bowl and mix well; you can use a mixer if you like, but I never have–just stir with a spoon to a smooth-ish consistency, do it as well as you can and that will likely be good enough (most things in life are like that, I find).
In another bowl, add flour, salt and baking soda (just ½ tsp BAKING SODA, if you add too much the cookies will be bitter, dude). Add chocolate chips and nuts–or if you don’t want nuts, just add chips–but that would be nuts. Mix ingredients well.
Add the sugar/butter combo to the dry ingredients and mix until incorporated. The dough should stick together when pressed.
Arrange spoonfuls of dough on an ungreased cookie sheet–about two inches apart. The recipe makes about 18-22 cookies, I usually get 17 or 18 cookies, cause I like mine kinda big.
Slide cookie sheet into an oven heated at 350 degrees F and let bake 10-12 minutes. When cookies are brown around the edges and lightly golden on top, they’re finito. Cool on cooling rack or eat them hot out of the oven with a glass of milk or a White Russian, depending on how your day is going.
