Cookie Dough Recipe – Icebox Cookies

Do you buy sleeves of premade cookie dough at the supermarket? You can make a homemade cookie dough recipe to keep in the freezer and then bake cookies whenever the mood strikes. Just slice off four or six or a dozen cookies or whatever you deserve and pop them into the oven for fresh baked cookies in a matter of minutes.

¾ cup SUGAR
½ cup BUTTER
1 EGG
1 tsp VANILLA
¾ cup NUTS
2 cups FLOUR

  • Around 30 minutes prior to making the dough, set out the butter and 1 egg.
  • In a mixing bowl, cream the sugar and the softened butter together. In the video, CG uses an electric mixer, but you can simply do this step by hand if you wish.
  • Mix the vanilla and the egg into the butter/sugar.
  • Add nuts. We use pecans, but walnuts or slivered almonds are good.
  • Incrementally mix in the dry flour until the flour is incorporated into the wet ingredients.
  • Divide the dough into thirds.
  • On a sheet of parchment paper, roll out each portion into a “log” shape about 1”-1½” inches in diameter. Check parchment paper prices on Amazon.
  • Roll the dough up into the parchment paper, twist the ends, and then place in the freezer until ready to bake.

Baking the Cookies

When you’re in the mood for cookies, just remove a roll of dough from the freezer and bake away. The sweet thing about having the dough premixed and rolled up, is that you can bake the entire roll, or simply slice off and bake as many cookies as you’re in the mood to eat.

  • Preheat oven to 350˚F
  • Remove dough from the freezer and slice cookies about ¼” thick.
  • On a baking sheet, arrange the cookies on parchment paper; you can use the parchment paper that the cookie dough was rolled inside! Compare prices for baking sheets on Amazon.
  • Bake cookies for about 10-12 minutes.
  • Remove cookies from the oven and allow to cool to an edible temperature, then eat away. I like to let the cookies cool completely so that they’re extra crunchy…perfect with coffee.
