Oatmeal Fudge Bars No Bake Recipe

No-bake oatmeal fudge bars are easy to prepare and make a nice treat when you’re in a chocolaty mood. This is a no bake recipe, but you will need to melt chocolate on the stove top, which takes only a few moments. Use dark chocolate chips for the fudge. When buying chocolate chips, check the ingredients and choose chips where the 1st ingredient is chocolate instead of sugar, that way you can feel like a health nut when indulging in this rich treat. However, since this is a no-bake oatmeal dish, don’t gorge yourself too much, otherwise your digestive tract may go on strike.

Oatmeal Fudge Recipe Ingredients

2 cups OATMEAL (quick oats)
1 cup OAT FLOUR
1 cup NUTS chopped
⅓ cup HONEY
½ cup COCONUT OIL
1 tsp VANILLA
1 Tbsp BUTTER
2 cups DARK CHOCOLATE
¼ cup COCONUT MILK

How to Make Oatmeal Fudge Bars

  • In a large mixing bowl, whisk together the honey, coconut oil and vanilla.
  • Add the quick oats and oat flour and stir into the mixture until well combined. Oat flour is simply ground up oats, so if you don’t want to buy oat flour, simply place oatmeal in a food processor and blend into a powder. Check the current price for Oat Flour on Amazon.
  • Add chopped nuts and fold into the mix. I like to use a combo of walnuts and toasted, slivered almonds, but any nut you prefer will be the right choice.
  • Layer the bottom and sides of a baking dish with parchment paper. Take about ⅔ of your oat-honey-nut mixture and press flat to cover the bottom of your baking dish; this will form the crust for your fudge bar. In the video recipe, I use an 8X8 baking dish for thick oatmeal fudge squares, but adjust the size of the dish to create the size bars you prefer. A larger dish will make for thinner bars, because that’s how science works. Be sure and prepare this part of the recipe before melting your chocolate.
  • On the stove top, prepare a double boiler to melt the chocolate. Heat the pot on medium low and add in the butter. When butter melts, add in the chocolate and stir until it has melted. Stir in the coconut milk until well mixed and the chocolate is smooth.
  • While still heated, remove melted chocolate from the stove and pour over your flattened oats.
  • Spread the chocolate evenly over the oats.
  • Take the remaining ⅓ oat mixture and crumble over the top of the soft fudge layer. Add extra nuts to the top if desired.
  • Use a spatula and slightly press the topping into the fudge.
  • Refrigerate overnight, or at least 2-3 hours before serving.
