Baked Cauliflower with Garlic Recipe

Oven baked cauliflower with garlic is easy to prepare and delicious. With a minimum of ingredients you can roast a super flavorful vegetarian dish. Besides the veggies, I use only a little olive oil, salt, and pepper with this roasted vegetables recipe.

What you need for Baked Cauliflower and Garlic

1 large CAULIFLOWER broken down
3 medium ONIONS
2 bulbs GARLIC
4-5 Tbsp OLIVE OIL
SALT and BLACK PEPPER to taste

How to make Roasted Cauliflower with Garlic

  • Preheat your oven to 425˚F.
  • Wash and pat dry a large head of cauliflower. Break the cauliflower down into florets and cut the stem into chunky sizes.
  • Chop the onions into large sizes and separate.
  • Break down two entire bulbs of garlic. Leave the garlic cloves intact, except for the larger cloves which you can slice into halves.
  • In a large bowl, combine the cauliflower, onion, garlic, olive oil, salt, and ground black pepper, and toss the veggies until lightly coated in oil.
  • Remove the veggies from the bowl and spread into a single layer on a baking sheet. You can line the baking sheet with parchment paper if desired. Check the current price for parchment paper on Amazon.
  • Place the baking sheet in the oven and roast for about 30 minutes, or until the cauliflower begins to color nicely.
  • After 30 minutes, remove the baking pan from the oven and give the veggies a toss and then re-spread them out into a single layer once more.
  • Return the baking pan to the oven and roast for approx. 20 more minutes or until the cauliflower has cooked down and colored to your desire.

And that’s it! This baked cauliflower with garlic recipe makes a fantastic vegetable side dish and is tasty hot or cold.

One of my favorite ways to use cauliflower is in a mock ‘potato” salad recipe. It’s a healthy twist on a classic potato salad.

Roasted Cauliflower Salt and Pepper Style

This roasted cauliflower recipe is spicy and delicious. My oven baked cauliflower dish is a twist on a Chinese inspired salt ‘n pepper style recipe. If you like salt and pepper shrimp, you might enjoy this vegetable version.

What you need for Spicy Roasted Cauliflower

1 lg head of CAULIFLOWER broken down
2 sliced JALAPENOS
6 chopped GREEN ONIONS
1 lg bunch fresh CILANTRO
10-12 cloves chopped GARLIC
2-3 Tbsp OLIVE OIL
SALT and BLACK PEPPER to taste

How to make Roasted Cauliflower Salt ‘n Pepper Style

  • Preheat your oven to 425˚F.
  • Wash and pat dry a large head of cauliflower. Break the cauliflower down into florets and cut the stem into chunky sizes.
  • Chop the green onions; separate the green onion tops from the green onion bottoms.
  • Remove the white pith and seeds from the jalapenos and cut the peppers into slices. Jalapenos can burn your skin, so wear gloves if you are sensitive.
  • In a bowl, combine the cauliflower, green onion bottoms, and sliced jalapenos. Add in the olive oil, salt, and ground black pepper.
  • Toss the veggies until lightly coated in oil.
  • Remove the veggies from the bowl and spread into a single layer on a baking pan. Use parchment paper if you can, it will make the veggies easier to toss when you add the cilantro later. Check the current price for parchment paper on Amazon.
  • Place the baking pan in the oven and roast 30-40 minutes, or until the cauliflower begins to color nicely. Give the cauliflower an occasional stir and re-spread into a single layer.
  • While the Cauliflower roasts, chop up 1 bunch of fresh cilantro. Use the stems and the leaves, and use a large bunch!-the cilantro will cook down considerably in the oven.
  • Place the chopped cilantro into the same bowl used for the cauliflower mix. Reserve a bit of the cilantro for a garnish.
  • Add in the chopped green onion tops.
  • Give the garlic cloves a rough chop and add into the bowl as well.
  • Toss the ingredients together. Do not add additional olive oil.
  • When the cauliflower in the oven begins to color, stir in the cilantro mix, and spread the veggies out and return the baking pan to the oven.
  • Roast approx. 20 minutes until the cilantro has cooked down, giving the dish a toss about halfway through.

And that’s it! This roasted cauliflower dish is surprisingly tasty hot or cold. I used two jalapenos, but you can cut back to one jalapeno if you’re leery of hot peppers. Or just substitute red pepper flakes, but I love jalapenos with roasted cauliflower.

Cauliflower Cakes for LESS Carbs MORE Flavor

Try this cauliflower cakes recipe if you’re into healthy, low carb, and delicious. Just ball your cauliflower into flavorful balls, press them out into cakes, and bake them in the oven. I like to top mine with a creamy sauce, but that’s optional. Serve these cauliflower cakes over a bed of spinach and you’ve got a low carb, light and delicious meal.

What You Need To Make Cauliflower Cakes

3 cups of grated CAULIFLOWER
½ cup of freshly grated CHEESE
2 EGGS beaten
1 Tbsp chopped JALAPENO
¼ cup finely chopped BELL PEPPER
2 finely chopped GREEN ONIONS
1-2 cloves minced GARLIC
1 tsp dried ITALIAN SEASONING
1 tsp TURMERIC POWDER
1 tsp GARLIC POWDER
1 tsp SMOKED PAPRIKA
1 tsp CHILI POWDER
PARCHMENT PAPER to line your baking sheet
MAYONNAISE and LEMON for dressing

How to Cook Cauliflower Cakes

  • Grate fresh cauliflower into granules resembling “poprocks”. I like to use a hand grater, but feel free to use a food processor, however, I think grating the cauliflower by hand actually makes the cauliflower cakes lighter and fluffier. If you do use a food processor, don’t over-process the cauliflower into a doughy consistency, unless you prefer a more dense cauliflower patty.
  • In a bowl, add the grated cauliflower and the rest of the ingredients.
  • Mix all ingredients well, then separate into individual portions for cakes.
  • Form each portion into a ball and squeeze out excess liquid.
  • Form the cauliflower ball into a ½ inch thick patty and place on the parchment paper lined baking sheet, and definitely USE PARCHMENT PAPER, or your cauliflower might stick after baking. The cakes will not hold together well before cooking, but you can adjust the shape and size of each patty while on the baking sheet. Check here for current pricing for parchment paper on Amazon.
  • Place baking sheet in an oven preheated to 400 degrees Fahrenheit, bake approx. 30-40 minutes, or until the cauliflower cakes color and firm up.
  • Remove cauliflower cakes from the oven and serve over a bed of greens.

Cauliflower cakes made with a food processor can form heavier, denser patties. For lighter cakes, use a hand grater.

I like to top the cakes with a simple dressing of mayonnaise and lemon, and adding a dash of jalapeno pickling juice or horseradish isn’t a terrible idea!

Quick Dressing for Cauliflower Fritters

½ cup MAYONNAISE
2-3 Tbsp LEMON JUICE
minced LEMON ZEST
1 tsp finely chopped PICKLE, JALAPENO, or GARLIC

Mix ingredients in a small bowl, adjust to taste. Refrigerate until ready to serve.

Cauliflower Gratin Recipe …creamy cauliflower casserole

This cauliflower gratin recipe is a tasty way to add cauliflower to your diet. This French inspired recipe is basically a veggie cheese casserole. I like to put creamy horseradish sauce in my version. I also like to add a few other veggies for color. I use red bell pepper, celery, and green onion in the video, but use whatever vegetables have in the fridge; using just a little shredded carrot will add pizzazz.

What You Need To Make a Cauliflower Gratin

2 lbs CAULIFLOWER florets
1 cup chopped veggies …like:
–CELERY
–RED PEPPER
–GREEN ONION
….but use whatever you have
2 cups whole MILK (or half and half)
5 Tbsp BUTTER
5 Tbsp FLOUR
1-2 cups freshly grated CHEESE
(I like using a combo of cheeses, some of my faves are
swiss, parmesan, gruyere, gouda, and havarti)
1 Tbsp CREAMY HORSERADISH (or 2 Tbsp?…it’s good in this dish)
1 Tbsp fancy MUSTARD
2 tsp ITALIAN SEASONING
SALT and PEPPER (to taste)

How to Cook Cauliflower Gratin

  • Cut the cauliflower into florets.
  • I like to steam the florets for 2-3 minutes, this will make the cauliflower gratin creamier. Use a steaming basket, or just place half an inch of water in a pan, cover, and steam that way for a few minutes. If you prefer your cauliflower a little firmer in your gratin,
    you can skip the steaming.
  • Lightly butter an oven safe baking dish. Check here to see current prices for a casserole baking dish on Amazon.
  • Arrange the cauliflower florets on the bottom.
  • Add about 1 cup of assorted, chopped veggies on top, for color and added texture.
  • In a sauce pan, melt butter.
  • On medium heat, add in the flour with the butter and stir for about 1 minute.
  • Add in half the milk (or Half and Half), and continue stirring.
  • As the mixture thickens, add in the rest of the milk and whisk smooth.
  • Add in salt and pepper to taste, and dried Italian seasoning.
  • Add in half of the freshly grated cheese, stir until melted, and remove from the heat.
  • Evenly pour the creamy, cheesy mixture over the top of the cauliflower/veggie mix.
  • Top the gratin with the remainder of the cheese (although you can reserve a bit of cheese for topping at the end, if desired)
  • Bake 25-35 minutes in an oven pre-heated to 350 degrees Fahrenheit.
  • When the cauliflower gratin begins to color nicely on top, it’s ready.
  • Garnish with extra cheese or fresh herbs.
