Mole Recipe Easy One-Pot Mole Sauce

My mole sauce is easy and delicious, so don’t be intimidated at the notion of making a homemade mole recipe, it’s no problema.

What are the Ingredients in a Mole Sauce?

Some of the best dishes we sampled during our 4 months traveling in Mexico were mole dishes. There are all kinds of moles, and whenever we have a chance to sample one, we do. Traditional moles are made with a vast variety of ingredients and it’s a sauce open to many interpretations.

Ingredients I used in my Mole Recipe Video

3 dried CHILE PEPPERS (2 ancho peppers and 1 New Mexican pepper)
¼ C fresh PEPPERS (a mix of habanero and jalapeno)
1½ ONION
7 GARLIC cloves
3 PLUM TOMATOES
¼ cup of WHOLE ALMONDS
¼ cup of PEANUTS
1 dinky BANANA
¼ cup RAISINS
7 dried pitted PRUNES
1 piece TOASTED BREAD
2 Tbsp cooking OIL
1 tsp CUMIN POWDER
1 tsp OREGANO POWDER
1 tsp SALT

Mole ingredients can vary wildly. The main ingredient you need are dried chile peppers. Below is a list of potential ingredients you might experiment with when making a mole sauce recipe.

How to Make a Mole Recipe

  • Use any dried chile peppers or combo of peppers that you like. I prefer ancho peppers, so I use these peppers in most every mole I’ve made. Check prices for ancho peppers on Amazon.
  • De-seed and de-stem the peppers.
  • Heat a large pot on medium heat with 1-2 Tbsp of oil.
  • When hot, add in the dried peppers and stir for about 1 minute.
  • Push peppers aside and add in the nuts and roast for a few moments.
  • Stir the peppers and nuts together and add in the fresh peppers, onions, garlic, and tomato as you chop them up. Chop everything roughly; it’s all going into the blender eventually, so nothing needs to be chopped small.
  • Add in the dried fruits and fresh fruit.
  • Stir in the seasonings and continue stirring as needed for about 5 minutes allowing the ingredients to color up slightly.
  • Raise the heat to high and add in just enough water or broth to cover the ingredients in the pot. It won’t take much liquid at all. Cover and bring the pot to a bubble, then reduce the heat and let ingredients simmer for about 30 minutes.
  • Pour off any excess broth from the pot and set the broth aside to use as needed.
  • Take the ingredients from the pot and add to a blender and blend until smooth. Add a piece of toast if you like to thicken the mole recipe. If the mole sauce is too thick, just add in some of the reserved broth. Any broth you don’t use can be saved and used in a later recipe. Check current prices for a blender on Amazon.

And that’s all there is to this mole recipe. You can use this delicious mole sauce in all kinds of dishes. Use the sauce right away or store it in the fridge, and mole freezes very well, so double or triple the recipe and freeze mole for later, or make batches for friends and family.

Mole sauce can be served with almost anything. My favorite mole dish is the traditional pairing of chicken and mole with rice, also called chicken mole, or pollo con mole. I love mole in the morning for breakfast. Mole sauce served with fried eggs and potatoes is the best, and of course toast to sop up the extra sauce is a must have.

We tried store-bought mole sauce and found it to be a pretty serviceable base. You can buy a premade mole sauce or paste and add in your own ingredients and flavors.

Mole sauce is a traditional recipe used in Mexican dishes. You know how bullfighters yell out olé? Put an “m” in front of it, and that’s how you say “mole”. But no matter how you say it, mole is delicious, and you have to try it.

What’s in a Mole Sauce?

We’ve been traveling in Mexico for over two months and one of the best things about our trip is sampling great Mexican cuisine. Some of the best dishes we’ve eaten have been mole dishes. Mole is a slow simmered sauce, reddish to brown in color, rich and thick, kinda like a smooth gravy with attitude. Mole open to many interpretations. There are all kinds of mole sauce, and whenever we get a chance to sample one, we do.

Make Mole at Home or Buy a Pre-made Mole Sauce or Paste

A key ingredient in a mole are chili peppers. A variety of chili peppers are roasted and ground into a powder or paste. This paste is added to broth or water along with a selection of other ground ingredients. This concoction is stirred and simmered and blended until smooth. Moles vary from region to region, and even house to house in Mexico.

Making a mole sauce from scratch can be fun, but pre-made mole powders and pastes are readily available for purchase at public markets in Mexico, grocery stores, and even online.
