Best Fennel Recipe with Shrimp

What’s fancier than a fennel recipe? Shrimp with fennel! Fennel sounds fancy, but it’s a super easy vegetable to use with a slightly different taste than all other vegetables. You can eat fennel cooked or raw, so it pairs well with quick-cooking seafood. If you’ve never tried fresh fennel before, this shrimp and fennel recipe is a great place to start.

Ingredients for Fennel Recipe

1 bulb of FENNEL
1 lb. SHRIMP peeled and deveined
1 small ONION sliced
15-20 sliced CHERRY TOMATOES
1 Tbsp TOMATO PASTE
½ cup to 1 cup WHITE WINE
1 Tbsp SMOKED PAPRIKA
SALT and PEPPER to taste
2 Tbsp OIL for cooking
FENNEL fronds for garnish

How to Buy and Cut Fresh Fennel

When you buy fennel at the store, it might simply be the bulb, or it might include the bulb, stalks and fronds. Buy fennel with an unblemished bulb, or at least with a bulb that can be cleaned up easily with a peeler. The edible parts of fennel are the bulb and the dill-like fennel fronds. The stalks resemble celery, but are too chewy to enjoy.

Pull off some of the fennel fronds, wash, dry, and then chop them into a garnish for later. The stalks can be cut away and discarded. Wash the bulb and cut away any blemishes, or remove the outer layers entirely if they have too many spoiled areas.

Thinly shave the bottom of the bulb away. Cut the bulb in half from top to bottom to reveal the core. Larger fennels will have thicker layers and a larger core. Make divots on either side of the core and cut it away and discard. Slice the fennel into larger, thin pieces. Smaller fennel is more tender, and better suited for raw recipes, while larger fennel is best for cooking.

How to Peel and Devein Shrimp

For this recipe, I like to buy medium-sized shrimp at the best price I can find. Don’t spend gobs of cash on super-model shrimp, because the shrimp are not the star ingredient, this is an ensemble of great tastes working together.

If the best-priced shrimp aren’t peeled and deveined already, that’s fine, cleaning shrimp is a simple task. Just take the shrimp and twist off the head, then squeeze the shrimp at the tail-end of the shell and pull the shell and legs off like a jacket. The head and shells can be saved to make a seafood stock.

On the top and bottom of the shrimp you’ll see dark lines running along the length of the body. The bottom line you can ignore, that’s just a vein, but the dark line up top is the gritty intestinal tract of the shrimp, and should be removed for best eating.

With a sharp knife, cut along the length of the line at the top of the shimp. Don’t cut deeply, just enough to cut open the “vein”, which is really the digestive tract. Open the cut under water and wash the intestines away. And that’s it!

Cooking Fennel and Shrimp in a Skillet

Heat a skillet and oil on medium heat. For a skillet like the one used in the video, you can check current prices for a Cast Iron Skillet on Amazon .

Add in the onion slices and cook for one minute, then add in the fennel slices and continue cooking another minute. Add in the smoked paprika, salt, and pepper and mix well, then add in the tomato paste and continue mixing.

Add in a little wine. Add in ½ cup to start, and then ¼ cup at a time as desired. Wine is great for this dish, but water is fine if you’d rather.

Add in sliced cherry tomatoes and shrimp, and then stir another 2-3 minutes or until the shrimp are opaque and cooked through. And that’s it! This shrimp recipe is great over rice, and looks especially nice topped with a garnish of the chopped fennel fronds.

Shrimp Toast on a Crunchy English Muffin

Here’s a shrimp toast recipe based on a Vietnamese deep fried shrimp bread dish. This shrimp recipe works as a snack or main dish, and it doesn’t require many shrimp, so it can be an economical shrimp recipe choice. I prefer English muffins for shrimp toast because it’s the perfect size, and they toast up super well in the oven. I use a mix of chopped and whole shrimp for maximum shrimpiness and visual effect, but experiment and find what you like.

Shrimp Toast Recipe Ingredients

12-15 SHRIMP peeled and deveined
3 ENGLISH MUFFINS
2 EGG WHITES
1 clove minced GARLIC
1 tsp dried ITALIAN SEASONING
1 tsp PAPRIKA
SALT and PEPPER to taste
some OLIVE OIL

How to Make Shrimp Toast

  • Peel and devein shrimp.
  • In a bowl, lightly toss shrimp with olive oil, season with salt, pepper, and paprika and set bowl aside.
  • Lightly coat English muffin halves with olive oil and slightly toast face down in a skillet.
  • Then place muffin halves face-up on a baking pan.
  • In a small bowl, whisk 1 or 2 egg whites with dried Italian seasoning and minced garlic.
  • Place a spoonful of this egg white mix on each muffin half.
    Place shrimp over the egg white and cover the muffin half. Use whole shrimp, or chop them, or use a combo. I like using some chopped and whole shrimp, that way I can entirely cover the
    muffin with shrimp, but also have a whole shrimp on top so it looks extra cool and tasty.
  • Top the shrimp with another spoonful of the egg white mix. This will bake and form a seal to hold the muffin and shrimp together.
  • Bake in an oven at 400 degrees Fahrenheit for about 20 minutes, or until toasted golden.

Shrimp Bread …let’s try Banh Mi Tom Chien

I finally tried Vietnamese fried shrimp bread, or bahn mi tom chien, or is it banh mi chien tom? Whatever you call it, it was a very tasty shrimp recipe. I have since made several different versions of shrimp bread at home, trying to make a healthy baked shrimp recipe that I can prepare in the oven instead of frying. I made a few duds, but finally settled on a baked version of Vietnamese shrimp toast using an English muffin, egg white, garlic, and Italian seasoning. I’m pretty happy with the recipe, although I might tinker with it a bit more. As soon as I get a video edited of the recipe, I’ll put it up, but until then, maybe experiment yourself with some versions of shrimp bread or shrimp toast. I love using the whole shrimp in the recipe, it looks very tasty, but in my own versions of Vietnamese shrimp bread, I peeled the shrimp and removed the head and tail. Unpeeled shrimp might be yummy when deep fried, but I don’t think baking will have as tasty an effect.

Baked Shrimp Bread Recipe Ingredients

SHRIMP peeled and deveined
ENGLISH MUFFIN
EGG WHITE
minced GARLIC
dried ITALIAN SEASONING
PAPRIKA
SALT and PEPPER to taste
OLIVE OIL

How to Make Baked Shrimp Bread

  • Peel and devein shrimp.

Shrimp Pancake Recipe Spicy Haemul Pajeon

This spicy shrimp pancake makes a nice change from your average pancake or shrimp recipe. It’s a savory pancake dish that can be prepared quick and easy and served for any meal, even
breakfast, if you don’t mind looking at a shrimp first thing in the morning. I like big chunky pancakes full of shrimp and vegetables, especially lots of green onion, but you can easily make
smaller versions of this seafood pancake.

Ingredients for Shrimp Pancake Recipe

8-10 Lg SHRIMP
5-7 GREEN ONIONS
2 EGGS
¼ RED BELL PEPPER
HOT PEPPER slices (optional)
1 cup FLOUR
1 cup WATER
1 tsp CHILI POWDER
1 tsp PAPRIKA
1 tsp GARLIC POWDER
SALT and PEPPER (to taste)
2-3 Tbsp OIL for cooking
1 Tbsp melted BUTTER optional

dipping sauce:
¼ cup RICE VINEGAR
¼ cup SOY SAUCE
CHILI-GARLIC SAUCE (to taste, optional)

How to Make a Spicy Shrimp Pancake

  • Combine flour and water and mix well, the batter should be thin.
  • Add in melted butter (this is optional…sometimes I do, sometimes I don’t).
  • Add in spices and stir.
  • Chop slender green onions into approx. 1 inch pieces and add into batter (thicker onions should be sliced lengthwise first).
  • Add in chopped shrimp.
  • Add thinly sliced red bell pepper and hot peppers to batter and combine all until ingredients are well coated.
  • Heat oil in a non-stick skillet on medium high. Check current prices for non-stick skillets on Amazon.
  • Adjust temperature as needed through out cooking, but make sure the oil is hot before adding the batter.
  • Add batter to hot skillet and shape into a pancake shape. Make 1 big pancake, or make pancakes; this recipe easily serves 2 people.
  • Pour a beaten egg over the pancake top.
  • Cook until the cake is golden brown on bottom, about 4-6 minutes.
  • Turn the cake (or flip it–but with confidence!) and cook the eggy side for about 2 more minutes.

And that’s it!
Top with sour cream, soy sauce, or with a mixed dipping sauce.

Dipping Sauce Idea

Combine equal parts rice vinegar and soy sauce and mix well. Adding a little chili-garlic sauce is a nice touch, and and will provide a nice bite. For a sweeter sauce, add a little hoisin or plum
sauce, or just 1-2 tsp sugar.

The Best Garlic Shrimp Recipe You’ll Ever Eat

Try this super-quick and delicious garlic shrimp recipe. Lots of olive oil and garlic add great flavor, especially when served with fresh sliced bread. Cook the shrimp quickly in a hot skillet, but don’t overcook, because over cooked shrimp get rubbery. The total cooking time for this dish start to finish should be about 5-7 minutes.

What you need for Garlic Shrimp

2 lbs SHRIMP
½ cup OLIVE OIL
½ cup GARLIC …or as much as you like (finely chopped)
½ tsp RED PEPPER FLAKES
½ tsp PAPRIKA
SALT and PEPPER to taste
3-5 Tbsp LEMON JUICE
some PARSLEY (chopped)
sliced BREAD for sure!

How to make this Garlic Shrimp Recipe

  • Peel and devein the shrimp (save the shells and heads to make a stock!)
  • Heat olive oil in a skillet on medium high heat. Check current prices for a non-stick skillet on Amazon.
  • When oil is hot, add red pepper flakes. Red pepper flakes add a nice heat, but substitute fresh peppers, or even a little cayenne if you like.
  • Add garlic and saute for 1 minute. Use as much garlic as you like. I prefer lots of garlic. I literally used an entire bulb. It seems like a lot, but the oil and garlic taste great with thick slices of fresh bread.
  • Add the shrimp, and continue sautéing on medium heat.
  • The shrimp only take about 3-5 minutes to cook depending on the size of your shrimp. Don’t overcook the shrimp; they will become rubbery if cooked overly long.
  • Add paprika, and salt and pepper to taste. If you’re just getting into home cooking, here are current prices for starter spice sets on Amazon.
  • Saute shrimp until JUST cooked, when shrimp begin to color and curl, then remove the skillet from the heat.
  • Add lemon juice and fresh chopped parsley.
  • Mix well and serve in a bowl with thick slices of fresh bread. Or serve over rice…but this oily, garlicky shrimp is GREAT with thick slices of tasty bread.
