Eggplant Tuna Casserole Recipe

Twice baked eggplant tuna casserole is a delicious comfort food that is surprisingly healthy. It is an easy and forgiving recipe too. If you are trying to wean yourself away from yummy (aka bready, meaty, cheesy) tomato dishes, this can help. Yes, it has some parmesan cheese but is delicious without the addition of mozzarella, ricotta, flour and/or egg that you often find in similar dishes. When you scan the ingredients and see eggplant and tuna – don’t flee! The first time I had a variation of this dish, I was very glad I wasn’t told those two ingredients were in it. Try it! It’s easy to make, delicious, and you may surprise yourself too.

Ingredients Needed To Make Eggplant Tuna Casserole

1 large EGGPLANT
1 tsp SALT
2 cups ONION, diced
7+ medium/large GARLIC CLOVES, pressed (go wild, use a whole bulb!)
OIL for veggie baking AND casserole dish (around 2 1/2 Tbsp)
9 oz CANNED TUNA in water, drained
14.5 oz can DICED TOMATOES, half drained
8 oz can TOMATO SAUCE
1 Tbsp ITALIAN SEASONING
1 Tbsp ROASTED GARLIC POWDER (regular garlic powder works too)
1 tsp MINCED ONION SEASONING
1 tsp CARAWAY SEEDS
½ C grated PARMESAN CHEESE, divided
Optional Seasoning: In the video, we also used 1 tsp OLDE THOMPSON EVERYTHING ITALIAN (it’s pizza seasoning – adds a bit of heat too!)

How To Make Twice Baked Eggplant Casserole

Preheat oven to 425 F.

Cut eggplant into 1/4 inch discs. Quarter the bigger discs. Sprinkle/distribute salt and let sit for 10 minutes (to draw out some moisture).  While your eggplant sweats, you can dice the onion. Peel and press the garlic. Put any extra small cloves aside so they don’t burn during the roasting process. [If you’ve never had roasted garlic before, and the amount we’re suggesting sounds very scary, know this – roasted garlic has a much more mellow flavor compared to eating it raw or sautéed. You can have roasted garlic without having ‘garlic breath’ for several hours.]

Pat eggplant dry.  

If your eggplant is extra large or your baking pan is small – you will need to roast your veggies in two parts (or use two oiled baking sheets). Place your eggplant and garlic in single layer on the oiled baking sheet. Sprinkle the onion onto pan – letting the onion cover any remaining surface area on the pan.

Cook your veggies for just 15-20 minutes. The onion tips will just begin to brown. In the finished casserole, the onions still have some texture – something to bite into*.

While your veggies cook, mix together your sauce of tuna, tomatoes, tomato sauce, and seasonings. Set aside.

Reduce your oven temperature to 350 F, when you take your veggies out.

Pick out garlic. Dice your garlic, in order to distribute the yummy flavor thorough out finished dish. Mix the diced garlic into your sauce.

In your oiled casserole dish, layer one-half of your eggplant, then one-half of your sauce** and sprinkle with about 1/3 of your Parmesan. Repeat the layers, topping with remaining 2/3 Parmesan cheese.

Bake, uncovered, in 350 degree F oven for 20 to 25 minutes. Most of the liquid will be gone. Broil/brown the cheese -watch carefully after 1 minute.  

Let it cool and then enjoy!

Hints To Make Your Casserole Just Right

Some people (Hi Mom!) would rather have their onions cooked more, so they don’t taste undone. If you’re in that group, simply cook your veggies till your onions are softer.

It’s okay if your sauce has a bit of liquid to it – simply mix up the sauce before you start layering.

How To Freeze Your Twice Baked Eggplant Casserole

Cover unbaked casserole with freezer paper and date it.  Freeze it for up to one month.

To bake frozen casserole, place in 375 degree F oven for 50 to 60 minutes. Let it set 10 minutes before serving to reabsorb some moisture.

Veggie Burger Recipe with Blackened Eggplant

I love a great burger, especially if it’s a healthy veggie burger recipe that also just happens to taste terrific. A thick slice of blackened eggplant makes a perfect sandwich filling, and if you dress
sliced eggplant up like a hamburger, eggplant makes one of the easiest, quickest, and tastiest veggie burger recipes you’ll ever eat. Portabello mushrooms make a nice veggie burger substitute, but can sometimes be a bit soggy. I’m a big fan of black bean burgers, but a bean burger can be a bit of work to make and hold together into a burger patty shape that satisfies. A blackened eggplant sandwich is super easy to prepare and definitely satisfies.

What You Need to Make a Great Veggie Burger Recipe

1 globe EGGPLANT also called an aubergine eggplant
some OIL to lightly coat the eggplant and skillet
a variety of spices like
CHILI POWDER, CHIPOTLE,
PAPRIKA, GARLIC POWDER,
GINGER POWDER, etc., but experiment and try your favorite spices
Burger Fixings such as
badass BUN
crunchy ONION
crisp LETTUCE
cool TOMATO
CHEESE, maybe?

How to Make a Blackened Eggplant Veggie Burger

Use an aubergine eggplant, also known as a globe eggplant. The skin has a dark purplish color and is edible, in fact the skin and meat of the eggplant can be eaten raw,
but for faux burger patties, I like to remove the skin.

  • Remove the skin.
  • Cut eggplant into thick slices, ¾” to 1″ thick.
  • Coat the eggplant lightly in oil.
  • Generously season both sides of the eggplant with your favorite spices, including salt.
  • Heat a lightly oiled skillet on medium-medium high heat. If you need a skillet that’s great on the stove top and in the oven, you can check current prices for a cast iron skillet on Amazon.
  • Cook the eggplant for 2 minutes on each side.
  • If you like cheese on your faux burger, add a slice over the eggplant during it’s last miunte in the skillet.
  • Remove the eggplant from the skillet and build your burger while it’s hot.

And that’s it.
Super tasty, meat-free, and probably the easiest veggie burger recipe you’ll ever make.

What to Look for When Choosing an Eggplant

  • Buy an eggplant that seems heavy for its size.
  • A larger eggplant will sometimes have a slight bitterness, so choose a smaller eggplant.
  • Look for a bright green stem top and a smooth shiny skin.
  • The flesh of the eggplant should be firm, and bounce back when lightly pressed.

Baingan Bharta Roasted Eggplant Curry Recipe

Roasted eggplant curry is easy to prepare and super-flavorful with this simple, classic Indian dish. Give this Baingan Bharta eggplant curry a try and let me know what you think.

What You Need to Make Eggplant Curry

Ingredients:
1 large EGGPLANT (roasted)
1 med/lg ONION (chopped)
3-4 cloves GARLIC (finely chopped)
1 hot PEPPER (finely chopped)
1 14 oz can diced TOMATOES (or 2 fresh tomatoes)
1 cup chopped CILANTRO (coriander leaves)
1 tsp MUSTARD SEEDS
1 tsp CUMIN SEEDS
1 tsp CORIANDER POWDER
½ tsp TURMERIC
½ tsp GARAM MASALA
5-6 Tbsp OLIVE OIL

How to Make Baingan Bharta

  • Slice the eggplant lengthwise down the middle into two halves, brush all surfaces with olive oil, place on a baking pan flat side down, and bake at 400 degrees F for 30 minutes.
  • Remove from oven. The eggplant will be very hot, so set aside to cool.
  • In a skillet, heat olive oil on medium high heat. Add mustard and cumin seeds and cook 20-30 seconds—not too long or they will overcook. A pinch of asafetida can be added as well, if desired.
  • When cumin seeds begin to open, add onions and sauté for a couple of minutes.
  • Add garlic and hot pepper and continue sautéing. Add coriander and turmeric powder and mix well. I like to go light on the spices, but feel free to add more if desired. If you like a spicier dish, add 1 tsp of chili powder. I like to take it easy on the spices so as not to overpower the flavor of the eggplant. Add salt to taste and continue cooking a couple more minutes.
  • Stir in tomatoes, reduce heat, and simmer 4-5 minutes. While tomatoes simmer, return to the eggplant.
  • At this point the roasted eggplant will be much easier to handle (although it may still be hot, so use care). Using a spoon, the meat of the eggplant can be easily scooped away from the skin. Discard the skin. Roughly chopped the eggplant and add to the skillet, mixing well with the tomato mixture. Cook for 3-4 minutes and then add garam masala. Mix and continue cooking another couple of minutes.
  • Add 1 cup of chopped cilantro (coriander leaves). Mix and remove from heat.
