Buffalo Chicken Pizza Recipe — Quick and Easy

I love buffalo chicken dishes whether they’re wings, casseroles, salads, and especially if it’s a buffalo chicken pizza. The combo of chicken, hot sauce, celery, and blue cheese is absolutely perfect, and a buffalo chicken pizza can be prepared super quick, especially if you’re lazy like me and skip the making a pizza crust part. I prefer flat bread for a pizza crust. If you’ve got leftover chicken and you’re the kinda person who likes hot wings with blue cheese, then you’ll probably enjoy this buffalo chicken pizza recipe.

Buffalo Chicken Pizza Recipe Ingredients

I won’t suggest specific amounts…it’ll all depend on the size of your pizza!
FLAT BREAD (pita bread, etc.)
leftover CHICKEN (cooked, chopped)
HOT SAUCE (whatever)
BLUE CHEESE DRESSING (good kind…don’t be cheap)
BLUE CHEESE CRUMBLES (crumbled)
CELERY (chopped)
MOZZARELLA CHEESE (shredded)

Buffalo Chicken Pizza Recipe Directions

As far as the amounts of ingredients goes…just follow your heart. I suggest going heavy on the toppings. A lot of celery doesn’t sound fun, but the overall contrast of tastes and textures is what makes this pizza delicious, so use lots of everything–including hot sauce–the hotter the better! The dairy in the blue cheese chunks and dressing will balance the heat.

Chop up some cooked chicken–use leftovers or just cook up a breast or two for topping. I like nice chicken chunks, about ½” square–but shred it if you like–it’s your pizza, man.

Drench the chopped chicken in hot sauce and set aside.

Chop up celery into ¼” thick pieces.

In a bowl combine a nice blue cheese dressing with blue cheese crumbles, about a 50/50 mixture. The result should be the consistency of a cottage cheese.

If you wanna make a pizza dough from scratch, God bless you. CG does, and it’s nice. I’m too lazy, and I actually prefer flat bread. I like pita bread–or any kind of flat bread. I’ve never tried naan, but it sounds good to me.

Spread the blue cheese dressing/crumbles over the flat bread. Spread it thick and even, almost to the edge–leave about a ¼” for a crust.

Generously top pizza with the hot sauce chicken chunks and celery, and cover with shredded mozzarella cheese.

Place on an ungreased baking sheet and cook in a pre-heated oven at 400 degrees Fahrenheit for 10-12 minutes, or until the edges of the flat bread are crisped to your liking. You can check here for current prices for baking sheets on Amazon. And that’s it! Hope you like the pizza!
